Soft Ginger Cookies
From Mother, from Gram, from Grandma Coe sometime in about 1920-30
6 to 8 cups flour 1 cup sugar 1 teaspoon salt
1 ½ teaspoon cinnamon 1 egg 2 cups molasses
2 teaspoon ginger 4 teaspoon soda 2 Tablespoon vinegar
¼ teaspoon nutmeg 1 cup shortening 1 cup boiling water
Sift together 6 cups flour with salt, and spices. Cream shortening and sugar.
Add egg. Beat until light and fluffy. Add molasses and vinegar.
Then add flour mix.
Dissolve soda in boiling water and add to mix to make a soft dough.
If necessary, add more flour to make dough.
Drop by teaspoons on greased cookie sheet.
Bake 8 to 10 minutes at 3350 degrees. Makes about 6 dozen.
